# Składniki:

For the rice

01 - 1 cup (200g) round short-grain rice (Arborio or Polish pudding rice), rinsed
02 - 3 cups (720ml) whole milk
03 - 1/3 cup (65g) granulated sugar
04 - 1 teaspoon vanilla extract
05 - Pinch of salt
06 - 2 large eggs, lightly beaten
07 - 1/3 cup (50g) raisins, soaked in warm water 10 minutes and drained (optional)
08 - 2 tablespoons unsalted butter

For the cinnamon apples

09 - 2 lbs (900g) tart apples (about 4 large), peeled, cored, and sliced 1/4 inch thick
10 - 2 tablespoons unsalted butter
11 - 1/4 cup (50g) granulated sugar
12 - 1 tablespoon lemon juice
13 - 1 1/2 teaspoons ground cinnamon

For the topping

14 - 1 tablespoon unsalted butter, cut into small pieces
15 - 2 tablespoons sugar mixed with 1/2 teaspoon ground cinnamon

# Przygotowanie:

01 - Combine the rinsed rice and milk in a saucepan with the sugar, vanilla, and salt. Simmer on low heat for about 20 minutes, stirring often, until the rice is tender and the mixture looks like thick porridge.
02 - Melt the butter in a large skillet and add the apple slices, sugar, and lemon juice. Cook over medium heat for 8 to 10 minutes, stirring occasionally, until the apples are just tender but still hold their shape. Stir in the cinnamon during the last minute.
03 - Stir 2 tablespoons of butter into the hot rice, then let it cool for about 10 minutes until just warm. Stir in the beaten eggs and drained raisins until fully combined.
04 - Butter a 9x9 inch (23x23 cm) baking dish and spread half the rice mixture across the bottom. Add the sautéed apples in an even layer, then top with the remaining rice and smooth the surface with a spatula.
05 - Dot the surface with the remaining butter and sprinkle evenly with the cinnamon sugar. Bake in a 180°C (350°F) oven for 30 to 35 minutes, until the top is deep golden and the edges are bubbling.
06 - Let the bake rest for 10 minutes before slicing so the layers set. Serve warm on its own or with cream, custard, or a dusting of powdered sugar.

# Uwagi:

01 - Best served warm the day it's baked, though it reheats well for several days after.
